We are looking for a talented Chef de Cuisine for a NEW restaurant in Vienna!! Fantastic opportunity to be part of a NEW opening. High volume and catering experience are a plus!
POSITION SUMMARY Chef de Cuisine: The Chef de Cuisine oversees all kitchen operations for the restaurant, as well as assisting with culinary activities and other property events. This role ensures the production of high-quality food, effective management of kitchen staff, and adherence to budgetary and operational guidelines, all while maintaining a safe, professional kitchen environment and upholding the company's commitment to exceptional quality, creativity, and presentation. The Chef de Cuisine is responsible for menu development, food purchasing, cost control, inventory, staff scheduling, and training. The role also involves overseeing the smooth daily operation of the kitchen. Additionally, the Chef de Cuisine manages food preparation and presentation for events, including internal and external catering. This position requires collaboration with the company's rental department to align culinary needs with event schedules, while ensuring compliance with health, safety, and sanitation regulations at all kitchen facilities.
DUTIES AND RESPONSIBILITIES Chef de Cuisine:
Menu Development and Food Preparation: - Assist in creating healthy, innovative, and on-trend menus for the restaurant.
- Order and prepare food for the restaurant, meetings, events, gatherings, and corporate functions.
- Assist with event setup, service, and breakdown as needed.
Operational Oversight and Managerial Support Chef de Cuisine:
- Oversee kitchen operations at the restaurant and provide operational support where needed.
- Hire, train, and supervise kitchen staff.
- Provide timely, ongoing constructive feedback to enhance staff development.
- Share Manager-on-Duty and on-call responsibilities during the season to ensure contractual. agreements, guest satisfaction, sanitation procedures, and operating policies are followed.
Sanitation, Maintenance, and Regulatory Compliance Chef de Cuisine:
- Ensure the cleanliness, sanitation, and proper maintenance of all kitchen equipment within all food & beverage facilities.
- Implement and enforce Virginia and federal health regulations, ensuring the highest standards of food safety and sanitation practices.
- Follow Virginia Department of ABC laws and regulations.
- Maintain compliance with regulations and health department standards.
Policy Implementation and Additional Duties:
- Assist the management team in enforcing Food and Beverage department policies and procedures.
- Perform other responsibilities as assigned.
EDUCATION AND EXPERIENCE Chef de Cuisine:
- Associate’s degree in culinary arts preferred or equivalent, transferable experience.
- Five (5) or more years of experience in the food and beverage industry with a minimum of two (2) years supervising a kitchen shift or stations.
- ServSafe Food Manager Certification.
REQUIRED KNOWLEDGE, SKILLS AND ABILITIES Chef de Cuisine:
- Proven culinary expertise and leadership in a high-volume or multi-outlet operation including catering.
- Experience in menu development and budget management.
- Comprehensive knowledge of food safety regulations and kitchen management best practices
- Excellent organizational, time-management, communication, and customer service skills.
- Ability to train, mentor, and supervise staff effectively.
- Availability to work, nights, weekends, and holidays.
- Possess a positive, professional attitude.
- Be able to manage multiple tasks in a constantly changing workplace.
PHYSICAL DEMANDS Chef de Cuisine:
- Be able to work in a hot and loud environment for long periods of time.
- Be able to work with kitchen hazards such as hot surfaces and liquids, sharp knives, and slippery floors.
- Be able to work in a standing position for long periods of time.
- Regularly required to walk, stoop, bend, and reach with arms.
- Be able to safely lift bags, cases, and stacks weighing up to 60 pounds.
- Use hands and fingers to handle, feel, reach, cut, mix, etc.
- Continual use of manual dexterity and gross motor skills with frequent use of bimanual dexterity and fine motor skills.
- Ability to taste and smell.
- Vision abilities include close vision, color vision, depth perception, and the ability to adjust focus.
- Regularly operates a computer and other office equipment (i.e. calculator, copier, printer, etc.)
